Our Story



      Like many of the great debates that the world has known throughout its long history, the South of Waco (aka Ochoa-Almanza) Cook-Off began, with an attempt to answer a simple question. Who is the best?

      Friends since childhood, Santiago Ochoa and Robert Almanza, in an attempt to settle a debate over who was the better pit-master, found themselves agreeing that only a group of unbiased judges could settle this debate.   With friends and family wanting to join in, what started out as two guys competing against each other turned into an annual competition to determine who truly is the best of the best in Central Texas at smoking ribs, chicken, and brisket.
